If you are looking to have an oyster roast and want the best of the local oysters then you’re at the right place. We pick/harvest the oysters from a private culture lease on Bulls Bay and WE DELIVER them to you. Our goal is to make things easy on you…we wash them extra clean so you don’t have to hose them off again while you’re trying to cook for everybody; we deliver them in our truck so you don’t have to hassle with messing your vehicle up; and we help you to determine how many bushels you’ll need to feed everybody. A lot of people ask “How many oysters are in a bushel?” or “How many people will a bushel feed?” My response is that the standard bushel in South Carolina is made up of clusters of oysters, not singles, and I’ve never counted each and every oyster, but my guess is between 200 and 300 oysters per bushel. A bushel of oysters will feed, on average, between 4 and 6 people. I read an article ( http://www.charleston.net/news/2007/nov/08/world_your_oyster_roast/ ) where Ben Moise, a retired game warden with the South Carolina Department of Natural Resources, said that a bushel will feed 7 people. If you’re providing other food such as chili, hot dogs, Frogmore Stew, etc then I recommend getting 1 bushel for every 6 or 7 people; if you’re only serving oysters then I recommend 1 bushel for every 4 or 5 people. The local seafood retailers charge $25 but also charge tax and you have to pick them up yourself and there’s no telling how muddy they will be. If you have gotten good, clean oysters from a retailer for less than $27 then please post a comment to let me know. Bought two busshel from Local Oysters and they came as promised on time. The best part they tasted great!! Had a great roast and it was a pleasure dealing with Jeff. Would use him again.
Jeff made my oyster roast easy and fun. He was right on time when he said that he would drop them off and the oysters were salty and wonderful. I will be using Jeff for all of my oyster roasts from now on. Thanks Jeff!
Hi David, with questions like yours, I always refer to SCDHEC regulaions…they can be found here ( http://www.scdhec.gov/environment/water/regs/r61-47.pdf ) …but some of what I’ve found in their regulations says:
C. HARVESTING, HANDLING, AND TRANSPORTATION OF SHELLFISH.
“(c) Temperature Maintenance -Within twenty hours after harvest,
shellstock temperature shall be maintained between thirty-four and forty-five
degrees fahrenheit (one and seven degrees centigrade). This temperature shall
be maintained during all handling, storage and transportation of shellstock.”

I was going to drive to Illinois over Christmas and would like to bring some of your oysrers to a friend. Is it possible to keep them fresh? It’s about a 15 hour drive. I guess I would worry more about them freezing if I stayed over night somewhere.
What are your thoughts?
